Reading the recent thread on polenta, it reminds me of a Mexican dish that is made with corn meal. I don't recall the name, but I think it begins with a "c". It's light and delicate, and slightly sweet. A little like sweet tamale masa, but not as heavy, and made with a yellow meal. I think it may have butter added to it. I've had it where they have added either some fresh or frozen corn to it. Almost like a dessert, I have found it mostly served as a side dish, scooped from the serving dish with an ice cream scoop. I would love to have the recipe, if any of you has one.
