Do only sushi restaurants require reservations?

I'm currently planning my trip to Tokyo/Kyoto/Osaka in November. I think I have decided on Sushi Ya for their lunch omakase unless someone can recommend a better lunch or dinner omakase under $150 USD that a foreigner can get a reservation at. My question is whether or not I need to make reservations at any other top restaurants ahead of time? This would mean any ramen, izakaya, tempura, or yakitori restaurants?

Also, I have done my research on unagi restaurants and Kabuto is fully booked. I'm reading that Obana is overrated and I am deciding between Unazen, Uomasa, and Tsugumian. However, I can't find any reviews on Tsugumian and I can't read the Japanese reviews on tabelog.
