Yet Another Sushi Etiquette Question

Whenever I order sushi/sashimi, there's always a lump of wasabi on the dish and they always bring a little dish for the soy sauce, which the server sometimes fills. One of the points brought up in the recent thread about Japanese restaurant manners is that, if I'm understanding correctly, it's rude to add wasabi to your soy sauce and it's a silly exercise since you should never dip your sushi or sashimi into it anyway. But, if using soy sauce and wasabi shows disrespect to the chef, why do they give it to you to begin with?

I don't mean to be flip about this, but I just don't understand.
