Sushi Chefs Lie

Please be aware that sushi chefs don't always tell the truth. You don't need a license, or anything to open a sushi bar, so the best thing is to be an informed consumer. There are good resources for sushi at Japanese bookstores or on the web. (I've included one link below). With a little research, you might end up knowing more than the person behind the bar, and lessen the likelihood of being cheated.
