Ok, I've been eating sushi a long time and feel like this is a dumb question, but I've always wondered...when you sit at the sushi bar and are paying after a wonderful meal and the sushi chef has been terrific, but you also have one waitress that has served you sake, tea, water, and cleared your dishes...do you tip 20% on the bill and then drop another $10 in the tip bowl that the sushi chef has on the bar? Am I stiffing the chef or over paying? I'm not sure if the tip from the bowl on the bar and the tip with the check are pooled. I'm not trying to be cheap, but just curious. What do other chowhounds do?
