Suggestions for a long Washington weekend

I'm going to be visiting someone in Bethesda, but since the consensus is that the choices there are few, I thought I'd ask about Washington as well.

I'd be interested in moderately nice places (she doesn't like scruffy), especially QUIET places, since this will be very conversational, even confessional. I'd be interested in:

American
French
Italian
Greek
Crab cakes
Brunch
Ice cream parlors
Chinatown Chinese (which can be scruffy)

By the way, any opinions on the cheap buses that run between DC and NYC?
