I will be baking for an event of 300-400 people for the 8 AM opening lecture. Whatever I bake needs to be made in advance and frozen, and defrosted day before or morning of. It's unclear whether I will have any facilities for last minute bake on site, and we are avoiding anything that needs knife, fork, etc.
I'm pretty comfortable with my sweet repertoire (although new suggestions always of interest!) but need ideas for "breakfasty" items for those who don't want sweets. Any ideas?
