Last night we had some friends over for dinner, and I subjected them to a very simple experiment...no browning or anything. I tossed some lamb shoulder chops in the slow cooker, tossed in a couple of tablespoons of garam masala (pepper(cayenne and tellicherry), cardamom, turmeric, cinnamon, star anise, ginger, black mustard seed, nutmeg, cumin, and methi), minced onion, crushed garlic. Tossed it all, covered with vegetable broth), and let it cook all afternoon. About fifteen minutes before serving I added oil cured black olives and minced preserved lemon. Served on faro with more preserved lemon, diced dried apricots, and cilantro on top. Side dish was ginger and honey braised carrots. Followed by Caesar salad with Pec Rom, a squeeze of lemon, and Cardini's. Easiest dinner party I ever threw and a not bad first "fall" dish of the season.
