Substituting vermouth for white wine in cooking

I read on this board that you substitute vermouth for white wine in cooking and I'm curious to hear from anyone who's done this. The benefit is suppose to be that the vermouth keeps for a long time while white wine goes bad. I don't drink white wine and I hate to waste a bottle when I just want to use a 1/4 cup. Does anyone have any recommendations for good buys on vermouth for cooking that's readily available and how long it lasts? (I'm in the Los Angeles area and have access to TJ's, Beverages & More and Costco) TIA
