Stillman Farm Beef

At the last Farmer's Market of the past season, I stocked up on root veg, other items and picked up a Rib Steak (labeled as such) while at the Stillman's booth. It was already frozen, so I popped it in the freezer at home. Since last night was so warm, I thought it was an ideal time to grill it up before it died a slow, cold death over the whole winter in the freezer.

Well--I thawed it on the counter all day in it's vacuum pack while I went to work (please don't tell the General Chow board, where this practive could be debated forever :) ).

Got home, rubbed it up with EVOO, S, P, a bit of wocestershire and minced garlic. Let it sit about an hour in this mix while I prepared other items.

Results were fantastic--medium rare with great flavor and texture. This is one of my top 5 (maybe 3) steaks ever--I'd say number one, but that woudld require serious recall of exact meals--and top 3-5 is high enough!!

I can't wait for the new Farmers market season to start--I'd love to join Stilman's meat and produce CSAs--but it's just too much food! Anyway, I cannot reccommend their beef enough!
