I perfectly understand the desire to put less strain on the environment by using pans, that will last a lifetime instead of non stick pans, that you WILL have to throw out at some stage.
I also understand the guys, who refuse to use non stick pans, because certain makers of the teflon coating, like DuPont, contaminate the surroundings near by their production plants.
However by using my quite durable high quality Demeyere Alu Pro non stick pans for dedicated dishes with eggs, delicate fish and for reheating leftovers, I’ve found that I use far less oil and butter for cooking these specific items.
Thus I use less plastic bottles of rapeseed oil and less aluminium packs of butter, which over a period of the lifespan of my durable Demeyere Alu Pro non stick pans means it might actually be MORE environmentally friendly to use my non stick pans, than if I used my carbon steel pans for specific delicate items and for reheating leftovers.
It’s also more healthy to cook using less oil and fat.
As long I make sure to not use too high heat when cooking in my non stick pans and to use silicone and wooden utensils, my non stick pans surface will also last far longer.
I'm in contact with my local waste management company, and they recycle non stick pans, by removing the coating and plastic from the pan. It'll cost me $8 pr. pan to recycle the non stick pan in a proper way. I'll gladly pay this price to have my worn out non stick pans reycled in a proper way.
So I actually feel I put less strain on the environment by using Non stick pans, than if I used my carbon steel pans for the delicate dishes, which don't need super high heat and can be made using less oil and butter in non stick pans.
