I got rid of my carbon steel, switch up to a Anolon NonStick
Have not had non stick cookware in at least 10-15 years...
Been careful using my IR gun to see how hot the pan gets.
Don't really take the burner above medium.
For a Fried Sunny Side Up - any tips on how to get that uber crispy edge. Maybe I need more fat (added less since it's non stick).
Or maybe it's missing the heat that it seeks - which I'm not doing to keep it below 500F ? I can do the same eggs in a SS with no sticking issues but generally I've got quite a but of fat in it, that I'm not even putting in the Non Stick.
