Every year I go to LV with a few friends (with somewhat modest budgets) and someone just suggests a place and we go there. So far, IMO we haven't seemed to find the right restaurants. Last year, we stayed at The Hotel and ate at the Steak house at Circus Circus, Trattoria Del Lupo and Border Grill. One friend had heard the steak at Circus Cirus was "one the best" and the other two restaurants were in our hotel - at least with Wolfgang Puck you know the food usually won't be awful. I've eaten a number of times at Border Grill and generally like it - the food is expensive and the menu is a bit tired after all of these years, but it is consistent, a bit unique and sitting outside at night drinking a margarita is a nice time. I didn't like Circus Circus (service slow, food cold, presentation bad - it seemed like an old Chart House for the 70's/early 80's), Lupo was ok as expected, although nothing memorable or to make me go back. I know these restaurants aren't the most expensive, but they are not cheap either and I would think I could have a better experience with a bit more work. I did eat at one buffet, Paris, and while I'm normally not a fan of the buffet thought it was one of the best ones I've ever had - cheese, ham, crepes plus normal American fare, etc....

We're staying at Caesar's this year and are probably limited to the same budget - maybe a bit higher for the right place - particularly the steak place which is a big deal for my group. Any recommendations for a new steak place and Italian? Lotus of Siam is already on the list.
