squash blossom question

hey folks,

thought I might pick the collective brain on this issue.

we're growing zucchini which are starting to come into full blossom right about now and I've been eyeing those flowers and thinking mmmmm quesadillas.

my question is if you pick the blossom do you lose the subsequent zuke? I think there's some rule about male/female blossom but i don't remember it now. Also is there something else we need to do to prepare these for inclusion on said quesadilla (discard stamen?)
