Springfield cashew chicken is the one and ONLY thing I miss about living in Missouri. It is deep-fried chunks of chicken with a brown "gravy" made out of chicken broth, oyster sauce, soy sauce & cornstarch. It's heavenly. Only problem is, I can't find it back here in Memphis. You would think my hometown would embrace fried chicken smothered in gravy....I have asked a few Chinese restaurant owners if they've ever heard of it and they just look at me like I'm crazy.
So......has anyone ever seen this on a menu around Memphis?
