I have to admit that I too have jumped on the low-carb bandwagon, but I'm also trying to keep low fat. I'm a vegetarian that eats seafood and feel quite limited with options. Typically, I bring some form of salad (greek, tuna, chopped, roasted veggie etc...)to work and it's getting boring. In winter, I'll bring soups, but I tend to get hungry early in the afternoon. Does anyone have any suggestions on how to shake my lunchbox blues? Also, with fall on the horizon, more hot lunch options would be great. TIA.
