How little can you spend at a top restaurant?

As a relative newcomer to the city and a very poor graduate student, my dilemma is this: I desperately want to try as much great food as possible here before I have to move to Arkansas or Missouri or Iowa in search of a tenure-track job. And while I know that there is much great food to be had at reasonable prices, I still fantasize about eating my way through the Jean-Georges and the Chanterelles that this city offers. I could just go now and then and order one course and a glass of tap water, but reasonably speaking--what do you consider an acceptable minimum amount to order at a nice restaurant (for lunch or dinner)?
