Spanish paprika-how to use each variety?

I've got a tin each of hot smoked paprika and bittersweet smoked parika. I was wondering how they are used in Spanish cookery. The flavor of the hot one makes some applications quite apparent, but I am wondering about the bittersweet, which, tasted raw, leans a lot towards bitter, so I know it is important how it is used.
