"Spaghetti red" as a cowboy side dish?

Years ago at an upscale-ish cowboy steakhouse I was served little coleslaw-size metal dish of angel hair sparsely coated in a spicy tomato sauce, possibly with chili powder and cumin. They called it spaghetti red. Does this ring a bell? I'd love to find a recipe.
