Trying this out - Tell me if you think it sounds good

I saw an appetizer on the food network and want to put a different spin on it, but am wondering if it would be appealing. The original concept is a cream cheese and hot/sweet pecan mixture piped onto celery stalks. I wanted to take the same mixture and pipe it onto crispy strips of procuitto. I thought the hot/sweet would balance out the saltiness of the procuitto.

Does this seem too rich? THey will be small, bite-sized portions. I just don't like the idea of celery...too watery and just not very elegant.

If the crispy procuitto isn't a good idea, do you have any other suggestions?
