Sofrito - Minus The Tomatoes?

A friend of mine was reminiscing a few weeks ago about the mixed, grilled feasts her father used to make back home on the coast of Spain. She glowed with joy as she spoke of the smoky seafood, sausages, and chicken and the mere mention of the sofrito literally brought a tear to her eyes.

But according to her this was not the sofrito of the Caribbean most often made with peppers and tomatoes. Her father's sofrito was little more than onions, garlic, and olive oil, with perhaps a sprinkling of herbs, which simmered slowly all morning as the rest of the preparations were made.

She has never been able to duplicate this sofrito and with her birthday coming up I would love to give it a try. With Google turning up nothing but tomato and peppers, I was hoping perhaps some of you may have seen such a recipe. It would be a Spanish sofrito (possibly even Portuguese) with no mention of tomato or peppers in the recipe.

Any links or recipes you could post would surely be appreciated!
