I'm posting this after a discussion about Socca on the SF Bay Area board. (buried in a discussion about Epicurious Garden) Kim Cooper wanted to know what Socca was.
1 cup chickpea flour
1 teaspoon salt
Black pepper to taste
4-6 T olive oil
1/2 an onion sliced thin
chopped fresh rosemary
Heat oven to 450. Put a well-seasoned 12 in. cast iron pan in the oven to heat. Sift chickpea flour into a bowl and add the salt and pepper and 1 cup lukewarm water slowly while whisking. Stir in 2 T olive oil. Let sit for 30 minutes or longer.
Stir onion and rosemary into batter and pour 2 T olive inot ban. Swirl pan and poor in the batter. Bake 12-15 minutes until firm and beginning to brown on the edges (mine took about 5 minutes longer). Brush top with olive oil and run it under the broiler until lovely and brown.
