Soba noodles made with yam?

Alexandra Halsey | Dec 19, 2004 07:01 PM

I went into my local Japanese import store to re-stock my soba supply, and noticed that most, if not all, of the soba noodles were made with a combo of buckwheat and yam flours. Is this standard? I don't remember my last batch (unfortunately don't remember the brand) as having anything other than buckwheat flour.

Can anyone recommend a buckwheat-only soba, or am I missing out on something by not going for the yam combo?

Thanks.

AH
