Snowbound once again in upstate NY. Went through, yesterday, the regular potatoes in soup, had some fried rice, had spaghetti last night, pancakes this morning, and now looking at 5 perfectly nice yams wondering if there is a yam-based adventure in my immediate future.
The yams this year seem to have been excellent--is it just me? Anyway, I can just bake them plain, which is great, but that seems like not a whole meal. (I'm out of meats and fish.) Flipped through epicurious, but nothing jumped out.
I'm not a marshmallow-on-yam person and generally would not add anything sugary to something like a yam.
Aside from that, does anyone have any tricks up their sleeve in the yam department? My larder is pretty well stocked with staples.
