Smithfield Country Ham for Chinese Cooking

I have read that one can substitute Smithfield Country Ham for Yunnan ham in Chinese recipes. In fact, I have seen fairly large Smithfield hams hanging in the NYC Chinatown butcher shops.

My question is: do I need to cook or process the ham in any way before I use it in Chinese dishes?
