Two of the excellent small plate tastings at Chernery Park are the Smoked Sable salad and the Corn and Chipotle Chowder. The sable is smoked in-house and presented on a julienned bed of radish, carrot, and cucumber with a kumquat vinaigrette garnished with slices of jalapeno. Here we have a fission of flavors; the silkiness of the smoked sable, the crunch of the vegetables, the spiciness of the jalapeno bound together with a spritely vinaigrette. My tastebuds were dancing. All to be wrapped in the richness of the chowder that followed. Ah-h-h.
