Help! I want the skin!

No matter how many times I read the instructions in JOC or CI for cutting up a roast or beer can chicken, I wind up tearing most or at least a lot of the skin off the pieces. It's especially true for the breasts. I cut the backbone out and when I turn the bird over to split the breasts, the skin's always left on the cutting board

Any tips?
