Ski trip lunch/snack ideas

I'm going on a ski trip w/ friends (there will be 6 total). I've offered to be in charge of lunch/snack. Crazy parameters so i'm at a loss and would love suggestions. We're driving 10 hours, little room in the car so no cooler or crock pot. As with ski resorts, no cooking or refrigeration but we're okay w/ eating things like ham sandwiches not refrigerated. It's for five days. We have a condo and can cook/prep, though not keep warm and I don't want to spend a lot of time cooking up there. So, are we stuck w/ peanut butter and jelly sandwiches? We can hit the store up there, too.

I would love a recipe for great granola type bites, peanut butter based ideally since I love pb. It doesn't have to be healthy. Nothing really crunchy and hard. No allergies. Also, I'll probably bake cookies/bars but they'll be good for a couple of days. Anything that lasts longer besides biscotti that doesn't end up tasting like crystallized sugar? Savory would be good, maybe some kind of nuts? Thanks--I've been trying to come up w/ something different and am drawing a blank.
