I am at an elevated risk of diabetes and need to reduce my carb intake. That said, I'm an inveterate foodie and will not do well with a 100% paleo diet/extreme low-carb diet. For example, I can tolerate mixing half white rice/half brown rice and can reduce overall rice consumption but I do not want to eliminate grains completely.
In my experience, diet/low-fat cookbooks are terrible.
What I'm looking for is the holy grail of a cookbook written by a true foodie that is "healthier" but doesn't need to be draconian.
I have already searched the forums for "healthy cookbooks" and "paleo cookbooks" but haven't found too much.
Any recommendations are much appreciated.
