I'm grilling up some ginger-marinated shrimp tonight & serving them up with fresh papaya pico de gallo.. but I'm stumped for a good side dish! I'm serving the shrimp over rice, but my boyfriend has a more-than-healthy appetite.. any ideas for a nice complement to the main event?? Can't wait to see your great suggestions!
*Oh.. and here's the Shrimp recipe, just in case..
1 lb shrimp, peeled & deveined
3 T olive oil
1/2 t fresh ginger, grated
-marinate shrimp for 15 minutes & grill roughly 2 min per side.
3/4 c diced papaya
3/4 c diced tomatoes
1/2 c diced yellow onion
2 serrano peppers, diced & seeded
2 T chopped fresh cilantro
2 limes, juiced
-toss together, add pinch of salt to taste
