Not finding any mention of Seabird Bakery, a pop-up by Chef Shuna Lydon, I'm starting a topic to ask New Yorkers to share about the wares. Her English Muffin Kit was recently highlighted by Pete Wells in his "Top 10 New York Dishes of 2021".
More than a decade ago, Shuna was a valued member of the SF Bay Area chowhound community during her rise as a star pastry chef in our restaurants. While we loved her dessert creations, for me at least, I enjoyed even more sharing the table with her on the chowing trails and uncovering new eats for us to talk about. I've followed her journey vicariously since she left San Francisco for New York interspersed with stints in Bangkok, Florida, the UK, and no doubt other venues.
On the home cooking front, she opened my eyes to many things, such as butterscotch.

Shuna launched Seabird in September 2020. Please indulge me with a first mouth report. Who's tried the offerings?
