I went to an upscale restaurant on New Year's Eve, and had a fine meal, but had a question about one course: the seafood salad. It was done well: surprisingly tender calimari, bay scallops, and shrimp, in a lemon sauce over greens.
My question concerns the shrimp: they were not deveined. I estimate them with 75% certainty to be 21-25 count; possibly 26-30.
Is this acceptable? Should shrimp this size be deveined? Along the same lines, what is the smallest shrimp size that must be deveined?
