A sign for Chili Dogs pulls me in like a moth to the flame. On a gray and drizzly afternoon in May, I ducked into Shoestring in Placerville.
Before I would order, I wanted the counterman to show me his weenie. He whipped one out of the cold box, an 8” all beef dog with a natural casing similar to a Casper dog. Yes!!!.
Ordered for here, the presentation is a thing of beauty. That might be the first (and only) time I'll ever say that about fast food. The dog was wrapped so simply in a thin piece of paper, twisted on top to close and placed on a red plastic tray. Just beautiful, as well as generating a minimum of packaging.
A great chili dog with wonderful snap! Grilled to a nice char till the casing crackles and almost yet doesn’t burst. The soft steamed bun could be warmer, still I loved the way it was filled to capacity with the chili. The beanless chili, as God intended, is mild mannered but exactly what the application calls for. A dusting of finely grated-to-order real cheddar cheese, mustard and fresh white onions completed the package. I asked for the peppers on the side.
This chili dog was crafted with great care and attention to every detail. There’s a reason this local place has been around since 1989, surviving the onslaught of fast food chains.
