Shelf life & stability questions for desserts

I actually have two separate questions & neither search has turned up an applicable answer.
The more complicated of the two concerns pomegranate arils on (or in) a meringue "kiss". Will the arils dry out, leaving only the unpleasant seed, or am I better off going for something like a dried cranberry instead (it's for color as well as flavor, & as far as I know, most of the guests are ok with either)
The other question was about the shelf-life of a homemade shortbread tartlet. How far in advance can I pull those together before they start to go stale? Is 3 weeks too far in advance?
