I'm looking for a place in CT (preferably no more than an hour from Waterbury, less than an hour though I'd hope) where I can get sheep's milk products. I've been told to cut out cow's milk dairy, but that I can have goat and sheep milk. I'm no cheese snob, I like the basics. Provolone, cheddar, ricotta, cream cheese, mozzarella, parmesan and asiago are my typical cheeses.
I've been told that Pecorino Romano is good; I have a chunk to grate up and try. I'd really like to get versions of ricotta and provolone and cream cheese, though. Something where you'd not really know it's different....not where it's sorta similar and it leaves you thinking "what WAS that?"
