Shaping truffles

I just saw a thread here about molding truffles in a flexible tray - any tips for shaping without the trays? I tried piping them, but they came out irregular - I think maybe the ganache was too cold when I tried piping. Help!

BTW, I am using Scharfen Berger 70% chocolate, 1 lb chocolate to 1 cup cream.
