Sevilla, Madrid, Valencia recommendations

We will be in Sevilla during holy week from Friday until Monday! I know it will be very crowded. We have 2 little kids (4 and 6), we all enjoy tapas and prefer casual places. We'd prefer to eat sitting down, but will happily try standing-only places if good. We are not fussy about eating times. I don't know if we can make reservations, but would be good if we could. Please recommend your favourite spots for these 3 cities. We'll have 3-4 days in each, never been to any of these cities and would like to like to try the local and regional foods. We arrive in Sevilla around 2pm on Friday and would like to get lunch right away, since it will be Good Friday, I think we need to have our dinner plans made as well. Please recommend places!
