I recently learned on Twitter of someone’s chickpea dish that’s made by sautéing old bread and spices in olive oil, puréeing the bread and spices into a gooey paste to use as a sauce base for a dish with chickpeas and spinach. She said that it was a Sephardic dish, she referred to it in Spanish. I was very curious because I’ve never heard of any dishes where the sauce is made of puréed Sautéed bread. It sounds delicious, I’m on fortunately gluten-free, but it sounded great. Has anyone heard of dishes like this? I’ve been googling but, maybe it’s because of the search terms being so generic, haven’t found anything. I’ll be really curious about other forms of cooking like this.
Or maybe it was really just something made up :-) I’m sure there’s some food history experts here though :-) Curious if this kind of recipe rings a bell for anyone.
