Is there anyone on the chowhound who sells dried home made pasta in packets. I have been making pasta for a long time(years) with a rolling pin and now I have gotten an atlas. My friend suggested that I should sell my pasta to other people. I got thrilled with the idea but when I tried drying the pasta, it was too brittle that it would break with little pressure.
I use semolina(70 percent) + Wheat(30 percent) + egg and I have been very happy when I eat it fresh. I have also perfected my dough over time and I love that recipe. Please advise on how I could dry my pasta better so that I could sell in a farmer's market.
Few things I am sure on:
1/ I don't want to freeze
2/ I am happy to experiment with my composition of flour if that turns out to be the reason
There is a lot of advice on the internet but no one really touches or features people who actually sell dried pasta.
