Here's what I'm planning on for next week. Current count is 24, but I am blessed with an able sous chef!
Brisket in a coffee-based sauce
Baked chicken in a soy-cilatro-honey marinade (from the fantastic Kylie Kwong cookbook)
Asparagus and red bell pepper salad
A ratatouille-ish dish
So, the ratatouille question: what might I try in lieu of zucchini, which I can't stand? Can I leave it out and just call it an eggplant stew, or would another addition go well (olives? fennel?)?
And please any general menu advice or suggestions!
Our Seder is kosher enough that it is non-dairy and flour-free, but I'm liberally using grain and legume derivatives (soy sauce, rice vinegar, sesame oil, miso), if that helps in my quest for further suggestions.
