Seaside cooking

This is probably a little off topic so if it is out of line, I understand it being deleted. Several years ago I worked as a deckhand on a party fishing boat out of Tampa. Half day trips and full day trips. Mostly tourest. Always fully booked. Near the dock which was home to 50 or so boats were many commercial establishments of all sorts. One in particular that stood out and has been a sucess for many years was a resturante that only prepared fish brought into by the customer. In other words, you bring in some of your days catch. The staff then cleans it and prepares it to your order. Serves it with the side dishes and beverage and charges a fraction of the price. Waiting line 7 days a week.
I know there is no such place in the New orleans area, but I have been looking into the possibility around Southeast Louisiana and the Mississippi coast. The question is: Do you, as interested diners, feel that such a place would be attrative? Will I go broke? Again, if off topic, I understand, if not, thanks for any advice.
