I was recently given a (the?) Marie Claire cookbook and I made my first recipe from it today - so great I thought I'd post it. I tossed some blanched thin asparagus, avocado pieces and some gorgeously fresh buffalo mozzarella in a dressing of chopped mint, parsley, champagne vinegar (I subbed for white wine) and EVOO. I added a bunch of blanched sugar snap peas (shelled) as well which, in my view, was a key part of the finished ingredient in taste and texture. Seasoned with sea salt and freshly ground pepper and voila, a beautiful spring/summer salad that looked and tasted delicious (if I had a digital camera, I'd have attempted a Carb Lover drool-pic). You could easily add/sub fava beans, leeks, maybe even bbq'd corn. I served it with a few slices of leftover bbq'd pork on the side - yum!
I'm a big fan of Marie Claire and a bunch of the Aussie chefs - I find their recipes particularly tempting as the weather warms up (and it is HOT here today).
