Scavanger's lobster spread

pat hammond | Jul 26, 2001 12:32 PM

Went to the big lobster fest in town last evening. I brought along a large zip-loc bag since I doubted I could eat two at one sitting and planned to bring one of them home. But as I got to eating, I realized that I could eat two just fine. I put my lobster bodies in the bag, then I noticed other people at the table paying no attention to the bodies whatsoever. Hmmm. I went into my panhandler mode: "You gonna eat that?" I collected 8 or 9. Here's what I did with them:

Scoop everything out of the body cavity (tomalley and coral and little bits of meat.

Poke out all the meat you can find between the cartilege in the body. Add to the above.

Finely mince celery and parsley and sweet onion. Add.
Bind with a bit of mayo, dash of tabasco, squeeze of lemon.

Serve on crackers, or toasted slices of baguette.
Fabulous! pat
