What should I save? Putting my stuff in storage...

I am moving in with my father next month, who is aging and disabled and now needs around the clock care. His house is packed full of stuff (ugh..) so I am only bringing essential items with me. I will be renting a storage unit and moving my apartment into storage. My things will likely be sitting in storage for ?a few years.

I have already thrown away food items that are not usable, and oils that are aging. Are there any spices, vinegars etc... that age well and that I should seal up and pack away? Or will all of them be useless in a few years? I wont be using most of them at my father's place as I cook very bland food for him or have already a full set of items I prefer there. And there isn't much space.

I think I will pack and save the salts, at least. Honestly, most of them are at LEAST 2-3 years old already... many older... I have a lot of asian and indian spices/flavorings.
