I just tried the SarVecchio brand of parmesan cheese (from Wisconsin!!) and was blown away.
I should preface this post by saying I am not a cheese person and am fussy about cheese. I really only like two types - first rate parmesan imported from Italy, and good quality mozzarella. I'll eat other types of cheese only if they are melted and combined with other things so I can't really taste them.
My daughter was home visiting and we went to Stew Leonard's, a local large scale food market. They were handing out samples of various cheeses on toothpicks, I started to walk by, not interested. My daughter grabbed one and scarfed it down and said mom you HAVE to taste this. So I asked the man slicing it what kind of cheese it was. He said SarVecchio parmesan. Since I really like parmesan, I figured why not... And WOW.. it was really delicious. It had the striking taste of parmesan but it was creamier, not quite as dry, giving it good mouthfeel to be eaten on its own.
The sample worked, I bought a wedge and have been using it in salads, as a snack, and grated over meatballs where it melts into a creamy puddle of delicious goodness.
Wondering if anyone else has tried this cheese, what they think about it, and what they use it for.
