"Sapphire Type" Bread Flour

Jambalaya | Mar 25, 2008 11:15 AM

I just returned from a local flour mill (for Cleveland area folks Fowler's Mills) where I purchased some of their bread flour. I know they don't mill it there, but I wanted to give it a try anyway. In any case, its labelled as "Sapphire" - type flour. Unfortunately I didn't have the presence of mind to inquire about this feature when I bought it. I'm wondering what this means. I googled the term and found Montana Mills makes a sapphire flour. I take it this stuff is hard type weat. Does anyone have an idea what this could mean?

Thanks
