Our class was on Mozzarella. It was my first time attempting cheese, and I found the class very hands-on, informative and fun. Louella is a lively teacher who knows her stuff. Went home with throbbing hands, a few lovely, snowy, fresh cheese balls, rennet, and a ton of curd to make more cheese in the next day or so. Looking at her website, the classes seem pricey, but through City College (which I found out through TastingTable.com), a two-night, 2-hour class was only $70 total, plus a $22 materials fee. Totally worth it and I'd do it again.
