Salt box safe?

You see chefs all the time touch steak(or other meats), grab salt from a salt box for seasoning, flip the steak and salt again. All while never washing their hands in between. Is this safe? Are they only using the salt box to season meat so any bacteria that may grow gets cooked away?

Seems unsanitary to me, just was curious what others opinion was.
