A couple of weekends ago, at our country house, I made Ribbolita bean soup with stale bread. After we had some for dinner, I froze the remainder in one large container. Yesterday I thawed it out, brought it to a simmer, and we enjoyed it again. There was still a good deal left over, so I refrigerated it, figuring wed have it again when we go back to the house late on Wednesday evening. However, bearing in mind the warnings about eating defrosted food immediately, Im now a little nervous about that. Will it still be safe to eat or should I toss it out?
By the way, the soup was really good. It was a recipe from the Food Network by Rachel Ray! So good, in fact, that my husband announced he thinks we should always have some of this on hand.
