Sac? Do we have refined enough palates? Dunn article in Bee.

Interesting article in the Bee about how some chefs have to cut back on the exotic foods (beef cheeks, veal sweetbreads, etc) to satisfy Sac area diners.

many restaurants have failed trying to serve food that most in Sac are not accustomed too. Cascades comes to mind.

Is this why Paragary's/Zin Grille etc are so popular? Because they take that kind of food and make it more Sacramento in presentation?

Outsdie of the Waterboy and maybe Biba I cannot think of many places that are very adventurous in food..

So whaddyathink?
